TOPIC: A Chain is Only as Strong as Its Weakest Link

As a business grows, it will eventually be necessary to add employees or work together as a team to accomplish your business goals. A business or team is only as strong or powerful as its least-skilled person.

World-renowned, Chef Rudi Liebenberg, Executive Chef at the Mount Nelson Hotel, will share his experience in managing a kitchen, where and how he started, the mistakes that he made and the direction he is currently taking.

He will share his experience in the kitchen and how it relates to the weakest person/standard in a business or a team and how this can impact the bottom line.


About our Speaker:

Chef Rudi Liebenberg, of The Mount Nelson Hotel is certainly no wallflower. He commands one of the biggest and oldest kitchens in Cape Town. He’s daring. He’s fun. And he’s a tomato virtuoso.

Rudi’s been a chef for over 25 years, and he’s still very passionate about sourcing the best (local) produce and cooking up new, innovative menus. He's also one of the most acclaimed chefs in Cape Town, and South Africa for that matter

After leaving school Rudi's first job was in a pizzeria, then a large salad production kitchen.  He was then called up to do national service where he started training as a chef for the military.

In 1990 Rudi undertook his training as a chef at the Technikon Witwatersrand Hotel School.

First job out of Hotel School was as a Commis in the old Tropicana Hotel in Durban followed by a position as a chef de partie in banqueting kitchen at the Parktonian Hotel. Moved up and eventually this was to be his first position as executive chef, a position he held for two years before joining the elegant Park Hyatt in Rosebank as chef de cuisine in banqueting.  He worked as executive chef for Alexander Forbes, Sheraton Hotel & Towers , Michelangelo Hotel and  the Prue Leith College of Food & Wine, Saxon Hotel.  In 2009 Rudi joined Mount Nelson Hotel as Executive chef.

Rudi represented South Africa in various international competitions, the highlight being a gold medal at the IKA Culinary Olympics in Erfurt in 2008 in the restaurant of nations.

In 2010, Recipient of Golden Circle Alumni Award in recognition of contribution to industry by School of Tourism and Hospitality (university of Johannesburg).

“In recent years my style and approach has changed considerably and my focus has moved more towards the respect we as chefs show towards food and it’s origins. We want to create a transparent process from supplier to plate”.

This is a long journey as it is continuous with many obstacles.

“The foundation of our process starts with respect, respect for the ingredient, respect for the process, respect for the end product and respect for the guest.”
